Ingredients
- 4 c. chicken, cut in cubes, or 1 1/2 lb. ground chicken, cooked
- 10 to 15 pitted olives
- 2 (15 oz.) cans kidney beans
- chili powder
- small onion, chopped
- 1 clove garlic
- 2 (28 oz.) cans tomatoes
- 1 Tbsp. vegetable oil
Method
- In a large saucepan, cook the onion and garlic in vegetable oil until soft.
- Add the tomatoes and kidney beans.
- Add chili powder.
- Mix well.
- Add chicken and olives.
- Let chili simmer on low heat for 45 minutes.
