Ingredients

  • 4 chicken breasts (boneless and skinless)
  • garlic powder
  • oregano
  • 1 bag spinach (or 2 bunches)
  • 4 green onions
  • 20 grape tomatoes (halved)
  • 1 cup shredded light or fat-free cheddar cheese
  • Dressing:
  • 1 cup fat-free mayonaisse
  • 1 cup fat-free sour cream
  • 1 tsp lemon juice
  • 1 green onion chopped
  • 1/8 tsp garlic powder
  • 1/8 tsp pepper

Method

  • Season chicken with oregano and garlic powder and grill til white throughout (10-13 mins) turning occasionally. Slice chicken into strips. While chicken is cooking, rip spinach into bite-size pieces and place in either large bowl or individual ones. Add chopped green onions and tomatoes. Add sliced chicken and top with shredded cheese. Serve dressing on the side. Dressing: Mix all ingredients together in small bowl til blended well. Cover and refrigerate til served.
