Ingredients

  • 6 grouse
  • 3 apples, halved
  • 8 oz. butter
  • Salt
  • Black pepper; freshly ground
  • Streaky bacon rashers

Method

  • Place an apple half and a knob of butter inside each bird.
  • Season inside and out with salt and pepper and wrap well in bacon.
  • Stand in 1/2-inch of water in a roasting pan and cover with foil.
  • Roast in a preheated oven at 300F for 45 minutes.
  • Remove the foil and pour the liquid from the pan.
  • Unwrap the bacon.
  • Increase the oven temperature to 450F and roast for 10 minutes to brown the birds.
