Ingredients

  • 1 c. shortening
  • 2 c. brown sugar
  • 1/2 c. white sugar
  • 4 Large eggs
  • 3 teaspoon baking pwdr
  • 1 teaspoon salt
  • 4 c. flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ginger
  • 1 teaspoon nutmeg
  • 1 c. lowfat sour cream
  • 2 c. pumpkin
  • 2 c. nuts

Method

  • Cream shortening, add in sugar and spices and beat till fluffy.
  • Beat in Large eggs and stir in walnuts by hand.
  • Sift all dry ingredients; add in alternately pumpkin, lowfat sour cream, and dry ingredients.
  • Turn into well greased 2 qt mold.
  • Cover tightly.
  • Set on trivet in warm water.
  • Boil hard 2 hrs in covered pot of water.
  • Makes 4 qts.
  • 1 qt mold takes about 1 1/4 hrs.
