- 1 c. shortening
- 2 c. brown sugar
- 1/2 c. white sugar
- 4 Large eggs
- 3 teaspoon baking pwdr
- 1 teaspoon salt
- 4 c. flour
- 1/2 teaspoon baking soda
- 1 teaspoon ginger
- 1 teaspoon nutmeg
- 1 c. lowfat sour cream
- 2 c. pumpkin
- 2 c. nuts
Method
- Cream shortening, add in sugar and spices and beat till fluffy.
- Beat in Large eggs and stir in walnuts by hand.
- Sift all dry ingredients; add in alternately pumpkin, lowfat sour cream, and dry ingredients.
- Turn into well greased 2 qt mold.
- Cover tightly.
- Set on trivet in warm water.
- Boil hard 2 hrs in covered pot of water.
- Makes 4 qts.
- 1 qt mold takes about 1 1/4 hrs.
