Ingredients
- 3 lb. meat (pork and beef)
- 3 doz. oysters
- 1/2 loaf French bread
- 8 oz. chicken livers
- 1 large onion
- 1 sweet pepper
- 3 sticks celery (leaves and all)
- 3 pods garlic
- 3 Tbsp. parsley, chopped
- 4 shallots (green tops)
Method
- Grind or chop seasonings.
- Drain oysters and keep water.
- Soak bread in oyster water.
- Use a small amount of cooking oil in pot and add everything except bread and oysters.
- Cook over medium heat, stirring often until grease rises to top (about 40 minutes). Squeeze bread and add to mixture.
- Let cook down.
- Chop and add oysters. Add parsley and shallots.
- Cook on low fire until oysters are done (not long).
