Ingredients

  • 3 lb. meat (pork and beef)
  • 3 doz. oysters
  • 1/2 loaf French bread
  • 8 oz. chicken livers
  • 1 large onion
  • 1 sweet pepper
  • 3 sticks celery (leaves and all)
  • 3 pods garlic
  • 3 Tbsp. parsley, chopped
  • 4 shallots (green tops)

Method

  • Grind or chop seasonings.
  • Drain oysters and keep water.
  • Soak bread in oyster water.
  • Use a small amount of cooking oil in pot and add everything except bread and oysters.
  • Cook over medium heat, stirring often until grease rises to top (about 40 minutes). Squeeze bread and add to mixture.
  • Let cook down.
  • Chop and add oysters. Add parsley and shallots.
  • Cook on low fire until oysters are done (not long).
