Ingredients

  • 1 1/2 c. white sugar
  • 1/2 c. butter
  • 2 eggs, slightly beaten
  • 2 1/2 c. flour
  • 1/2 tsp. salt
  • 2 tsp. baking soda
  • 1 pt. hot unsweetened applesauce
  • 1 c. large raisins
  • 1 c. chopped dates
  • 1 c. mixed candied fruit (no peel)
  • 1 c. nutmeats, coarsely chopped

Method

  • Cream together sugar and butter.
  • Add eggs and beat well. Sift together flour, and salt, set aside.
  • Blend baking soda and applesauce (this may foam up suddenly, use a 1-quart pan).
  • Add applesauce and flour mixture alternately to creamed mixture.
  • Mix well.
  • Add remaining ingredients.
  • Spread into ring pan or loaf pans.
  • Decorate with candied fruits and nuts.
  • Bake at 300° for about 1 hour.
