Ingredients

  • 1 lb. dried black beans or 4 cans Progresso black beans
  • 2 large carrots, chopped fine
  • 1 1/2 large onions
  • 4 stalks celery, crushed
  • 4 cloves garlic
  • olive oil
  • 4 bay leaves
  • 1 can Ro-Tel tomatoes with hot chilies
  • 3 bouillon cubes (beef, chicken or vegetable)
  • 1/2 c. lemon juice

Method

  • Use either 1 pound of dried black beans (sometimes called turtle beans) or 4 cans black beans.
  • If you choose dried beans, soak them according to package and don't drain any remaining soaking water before proceeding with recipe.
  • Set beans aside.
