- 1 lb. dried black beans or 4 cans Progresso black beans
- 2 large carrots, chopped fine
- 1 1/2 large onions
- 4 stalks celery, crushed
- 4 cloves garlic
- olive oil
- 4 bay leaves
- 1 can Ro-Tel tomatoes with hot chilies
- 3 bouillon cubes (beef, chicken or vegetable)
- 1/2 c. lemon juice
Method
- Use either 1 pound of dried black beans (sometimes called turtle beans) or 4 cans black beans.
- If you choose dried beans, soak them according to package and don't drain any remaining soaking water before proceeding with recipe.
- Set beans aside.
