Ingredients
- 1 1/4 lb. halibut, cut 1-inch thick
- 2 tsp. cooking oil
- 3/4 c. soft bread crumbs
- a little lemon juice
- 2 Tbsp. grated Parmesan cheese
- 1 Tbsp. tarragon
- 1/2 tsp. paprika
- dash of pepper
- tarragon sprigs and lemon wedges (optional)
Method
- Cut fish into 4 portions, pat dry and brush with oil.
- In shallow dish, stir bread crumbs, Parmesan cheese, tarragon, paprika and pepper.
- Dip fish to coat both sides.
- Arrange on baking dish or pan.
- Sprinkle leftover crumbs on top.
- Bake at 450° for 8 to 12 minutes or until fish flakes easily.
- Do not turn during baking.
