Ingredients

  • 1 1/4 lb. halibut, cut 1-inch thick
  • 2 tsp. cooking oil
  • 3/4 c. soft bread crumbs
  • a little lemon juice
  • 2 Tbsp. grated Parmesan cheese
  • 1 Tbsp. tarragon
  • 1/2 tsp. paprika
  • dash of pepper
  • tarragon sprigs and lemon wedges (optional)

Method

  • Cut fish into 4 portions, pat dry and brush with oil.
  • In shallow dish, stir bread crumbs, Parmesan cheese, tarragon, paprika and pepper.
  • Dip fish to coat both sides.
  • Arrange on baking dish or pan.
  • Sprinkle leftover crumbs on top.
  • Bake at 450° for 8 to 12 minutes or until fish flakes easily.
  • Do not turn during baking.
