Ingredients

  • 2 c. sugar
  • 1/2 c. white syrup
  • 2 egg whites
  • 1/8 tsp. salt
  • 1/2 c. water
  • 1 tsp. vanilla
  • 1 pkg. cream cheese
  • peppermint flavoring
  • 1 lb. or less powdered sugar
  • food coloring
  • 1 1/2 lb. sugar
  • 1 lb. raw peanuts
  • 1 pt. water
  • 1 Tbsp. baking soda
  • 3/4 lb. glucose
  • 2 oz. butter
  • 1 tsp. vanilla

Method

  • In a large saucepan, cook sugar, water and glucose until it threads (usually 20 minutes).
  • We use a candy thermometer.
  • Add butter and peanuts and continue cooking, stirring constantly so peanuts won't stick to the pan.
  • When the thermometer shows soft crack, immediately have someone bring in the cold marble and lay it on a large countertop.
  • Use butter or cooking spray such as Pam, and grease marble, countertop and forks.
