Ingredients

  • 5 cups raw broccoli florets
  • 1 tablespoon minced shallot
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons chopped fresh thyme
  • 2 tablespoons toasted pine nuts

Method

  • Arrange broccoli in a steamer, steam covered for 4 minutes or until crisp-tender.
  • Place broccoli in a large bowl.
  • Combine shallots, olive oil, lemon juice, dijon mustard, and fresh thyme in a bowl, and stir with a whisk.
  • Add broccoli, and pinenuts to the oil mixture, and toss.
