Ingredients

  • 1/4 c. + 2 tbsp. butter
  • 1/2 c. chopped onion
  • 1 tbsp. curry pwdr
  • 1/4 c. + 2 tbsp. flour
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon sugar
  • 1/4 teaspoon grnd ginger
  • 2 c. chicken bouillon
  • 2 c. lowfat milk
  • 4 c. cooked, cut up chicken
  • 1 teaspoon lemon juice

Method

  • Heat butter over low heat.
  • Saute/fry onion and curry pwdr till onion is tender.
  • Add in flour, salt, ginger and sugar.
  • Cook till smooth and bubbly.
  • Remove from heat.
  • Add in chicken broth and lowfat milk.
  • Bring to boil, stirring constantly.
  • Boil about 1 minute.
  • Add in chicken and lemon juice and heat through.
  • Serve over rice.
  • Accompaniment: Chutney, pineapple chunks, peanuts, raisins, coconut, currant jelly.
