- 1 lb. fresh green beans
- 1 small onion, sliced
- 1 c. cherry tomatoes, halved
- 3/4 c. nonfat yogurt
- 1 Tbsp. red wine vinegar
- 1 Tbsp. lemon juice
- 1 Tbsp. Dijon style mustard
- 1/2 tsp. dried dill
- 1 clove garlic, minced
- 1/2 tsp. white pepper
Method
- Wash and trim beans.
- Boil in small amounts of water until crisp and tender; drain.
- Combine beans, tomato halves and onion; set aside.
- Combine ingredients and mix well.
- Toss beans with yogurt dressing.
- Chill several hours before serving.
- Yields about 4 cups.
