Ingredients

  • 1 lb. fresh green beans
  • 1 small onion, sliced
  • 1 c. cherry tomatoes, halved
  • 3/4 c. nonfat yogurt
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. lemon juice
  • 1 Tbsp. Dijon style mustard
  • 1/2 tsp. dried dill
  • 1 clove garlic, minced
  • 1/2 tsp. white pepper

Method

  • Wash and trim beans.
  • Boil in small amounts of water until crisp and tender; drain.
  • Combine beans, tomato halves and onion; set aside.
  • Combine ingredients and mix well.
  • Toss beans with yogurt dressing.
  • Chill several hours before serving.
  • Yields about 4 cups.
