Ingredients

  • oil
  • 3 chopped onions
  • 3 chopped green peppers
  • 3 large cloves finely chopped garlic
  • 1 to 2 lb. chopped beef
  • 1 to 2 cans tomatoes
  • 1 can tomato paste
  • 2 to 8 Tbsp. chili powder (to your taste)
  • 1 Tbsp. sugar
  • sprinkling of salt, pepper and paprika
  • 2 bay leaves
  • 1 tsp. cumin
  • 1 tsp. basil
  • pinch of cayenne or hot chili sauce
  • 1 to 2 cans kidney beans

Method

  • In 1/2-inch oil, saute until soft the onions, peppers and garlic.
  • In another pan, brown the beef. Drain fat from beef and add beef to onions and peppers. Add the tomatoes, tomato paste and chili powder.
  • Add the sugar, salt, pepper, paprika, bay leaves, cumin, basil and cayenne or hot chili sauce. Simmer all for at least 1 1/2 hours, then add the kidney beans.
  • Makes 6 to 8 servings.
