Ingredients
- 5 Tbsp. butter
- 3 Tbsp. flour
- 1 1/2 c. milk
- 1/4 tsp. salt
- dash of pepper
- 1 (15 oz.) can asparagus
- 1 can cream of mushroom soup
- 2 hard-boiled eggs
- 1/2 lb. plain cheese, grated
- crushed cracker crumbs
Method
- Melt 3 tablespoons butter; blend in flour.
- Add milk, salt and pepper.
- Cool until thickened, stirring constantly.
- In a medium casserole, arrange layer of half the asparagus, half the mushroom soup, 1 egg (sliced), 2 tablespoons butter, half of the cheese, half the white sauce and half the cracker crumbs.
- Repeat layers, topping with cracker crumbs.
- Bake at 300° for about 30 minutes.
