Ingredients

  • 5 Tbsp. butter
  • 3 Tbsp. flour
  • 1 1/2 c. milk
  • 1/4 tsp. salt
  • dash of pepper
  • 1 (15 oz.) can asparagus
  • 1 can cream of mushroom soup
  • 2 hard-boiled eggs
  • 1/2 lb. plain cheese, grated
  • crushed cracker crumbs

Method

  • Melt 3 tablespoons butter; blend in flour.
  • Add milk, salt and pepper.
  • Cool until thickened, stirring constantly.
  • In a medium casserole, arrange layer of half the asparagus, half the mushroom soup, 1 egg (sliced), 2 tablespoons butter, half of the cheese, half the white sauce and half the cracker crumbs.
  • Repeat layers, topping with cracker crumbs.
  • Bake at 300° for about 30 minutes.
