Ingredients

  • 1 pkg. yeast
  • 1 c. lukewarm water
  • 1 c. shortening
  • 1/3 c. sugar
  • 1 Tbsp. salt
  • 1 c. mashed potatoes, freshly cooked and sieved
  • 2 egg whites, beaten
  • 5 to 6 c. flour (to make stiff dough)

Method

  • Dissolve yeast in lukewarm water.
  • Mix shortening, salt, sugar and potatoes.
  • When cool, add dissolved yeast and egg whites.
  • Mix and add flour to make a stiff dough.
  • Knead thoroughly and let rise in refrigerator overnight.
  • Knead again.
  • Make into rolls.
  • Let double in bulk.
  • Bake at 350° for about 10 minutes.
