Ingredients
- 1 pkg. yeast
- 1 c. lukewarm water
- 1 c. shortening
- 1/3 c. sugar
- 1 Tbsp. salt
- 1 c. mashed potatoes, freshly cooked and sieved
- 2 egg whites, beaten
- 5 to 6 c. flour (to make stiff dough)
Method
- Dissolve yeast in lukewarm water.
- Mix shortening, salt, sugar and potatoes.
- When cool, add dissolved yeast and egg whites.
- Mix and add flour to make a stiff dough.
- Knead thoroughly and let rise in refrigerator overnight.
- Knead again.
- Make into rolls.
- Let double in bulk.
- Bake at 350° for about 10 minutes.
