Ingredients

  • 1 1/2 c. Great Northern beans
  • meaty ham bone
  • 1 c. diced onions
  • 1 c. diced potato
  • 1/2 c. diced celery
  • 1/2 to 1 c. diced carrots
  • 1 clove garlic, minced or chopped fine

Method

  • Soak beans overnight in 1 quart of water, then drain beans and measure liquid.
  • Add enough water to make 2 quarts.
  • Place soaked beans, water and ham bone in a kettle.
  • Cover and simmer 2 hours. Add onions, potato, celery, carrots and garlic.
  • Simmer 1 more hour.
  • Remove meat from bone and return meat to soup.
  • Season to taste with salt and pepper.
  • Serve piping hot.
  • Any leftovers freeze well.
