Ingredients
- 1 1/2 c. Great Northern beans
- meaty ham bone
- 1 c. diced onions
- 1 c. diced potato
- 1/2 c. diced celery
- 1/2 to 1 c. diced carrots
- 1 clove garlic, minced or chopped fine
Method
- Soak beans overnight in 1 quart of water, then drain beans and measure liquid.
- Add enough water to make 2 quarts.
- Place soaked beans, water and ham bone in a kettle.
- Cover and simmer 2 hours. Add onions, potato, celery, carrots and garlic.
- Simmer 1 more hour.
- Remove meat from bone and return meat to soup.
- Season to taste with salt and pepper.
- Serve piping hot.
- Any leftovers freeze well.
