Ingredients
- 8 slices bacon
- 1 c. chopped onion
- 1 c. chopped celery
- 2 medium potatoes, peeled
- 1 c. chicken broth
- 1/4 c. chopped parsley
- 1 (10 1/2 oz.) cream of mushroom soup
- 1/2 c. sour cream
- 1 1/2 c. milk
- salt and pepper to taste
Method
- In saucepan, cook bacon, onion and celery until bacon is lightly browned and vegetables are tender.
- Pour off drippings. Dice potatoes; add with broth, salt and pepper.
- Cover; simmer 12 to 15 minutes or until potatoes are done.
- Stir in soup, sour cream, milk and parsley.
- Heat through.
- Serves 6.
