Ingredients

  • 8 slices bacon
  • 1 c. chopped onion
  • 1 c. chopped celery
  • 2 medium potatoes, peeled
  • 1 c. chicken broth
  • 1/4 c. chopped parsley
  • 1 (10 1/2 oz.) cream of mushroom soup
  • 1/2 c. sour cream
  • 1 1/2 c. milk
  • salt and pepper to taste

Method

  • In saucepan, cook bacon, onion and celery until bacon is lightly browned and vegetables are tender.
  • Pour off drippings. Dice potatoes; add with broth, salt and pepper.
  • Cover; simmer 12 to 15 minutes or until potatoes are done.
  • Stir in soup, sour cream, milk and parsley.
  • Heat through.
  • Serves 6.
