Ingredients
- 2 lb. boneless chicken breasts
- 1/4 c. margarine
- 1 medium onion, diced
- 15 oz. can tomato sauce
- 1 medium green pepper, diced
- 1/4 c. chopped parsley
- 1/2 tsp. oregano leaves
- 1/2 tsp. chopped garlic
- 1/2 c. dry red wine
- salt and pepper to taste
Method
- Cube chicken; brown in margarine.
- Set aside.
- In same pan, cook onions and pepper.
- Add to chicken.
- Add tomato sauce and seasonings; heat.
- Add chicken and vegetables.
- Cover; simmer about 35 minutes, adding wine during simmering.
- Serve over angel hair pasta or linguine.
