- 1 clove garlic
- 3 anchovies
- 1/2 c. oil
- 1/2 lemon
- 1 coddled egg
- 1 tsp. Romano cheese
- 1/4 tsp. dry mustard
- 1 Tbsp. red wine vinegar
- 1 head romaine, washed and dried
- croutons
- fresh ground black pepper
- grated Romano cheese to taste
Method
- Crush garlic in wooden bowl and smear; repeat with anchovies. Add oil and lemon juice.
- Mix. Add egg and mix.
- Add cheese, mustard and vinegar.
- Mix. Add romaine lettuce; toss.
- Serve with croutons, cheese and pepper.
