Ingredients

  • 1 clove garlic
  • 3 anchovies
  • 1/2 c. oil
  • 1/2 lemon
  • 1 coddled egg
  • 1 tsp. Romano cheese
  • 1/4 tsp. dry mustard
  • 1 Tbsp. red wine vinegar
  • 1 head romaine, washed and dried
  • croutons
  • fresh ground black pepper
  • grated Romano cheese to taste

Method

  • Crush garlic in wooden bowl and smear; repeat with anchovies. Add oil and lemon juice.
  • Mix. Add egg and mix.
  • Add cheese, mustard and vinegar.
  • Mix. Add romaine lettuce; toss.
  • Serve with croutons, cheese and pepper.
