Ingredients

  • 1 1/2 c. chopped dates (1 pkg.)
  • 1 1/2 c. boiling water
  • 1 Tbsp. butter or margarine
  • 1/2 tsp. salt
  • 1 1/2 c. sugar
  • 2 3/4 c. flour
  • 1 tsp. baking soda
  • 1 egg
  • 1 c. chopped walnuts or pecans
  • 1 tsp. vanilla

Method

  • Cover the dates with the boiling water and to this, add butter, salt and sugar. Slowly add dry ingredients (flour and baking soda), then add the nuts, egg and vanilla. Use 2 greased 8 1/2 x 4 1/4 x 2 1/2-inch foil loaf pans and bake at 350° for 45 to 50 minutes or until cake tester comes out clean.
