Ingredients

  • 1 large can yams
  • 1 fresh lemon
  • 1 fresh orange
  • 1/4 lb. butter
  • 1/2 c. brown sugar
  • 1/2 tsp. mace
  • 1/2 tsp. allspice
  • 2 Tbsp. pureed coconut
  • 1 dash salt

Method

  • Place butter in saucepan under low flame.
  • Add 1/4 teaspoon of lemon and 1/4 teaspoon of orange juice.
  • Add other ingredients and stir well until smooth consistency.
  • Slice yams and place in baking pan.
  • Pour mixture over yams and let sit for 3 minutes.
  • Place yams in preheated oven (350°) until bubbling brown on top, approximately 15 to 20 minutes.
  • Serves 5 people.
