- 1/4 c. sugar
- 1/4 c. cornstarch
- 1 pkg. unflavored gelatin
- 3/4 c. light cream or half and half
- 2/3 c. white corn syrup
- 3 beaten egg yolks
- 2 Tbsp. butter or margarine
- jelly beans (green and yellow)
- 1/3 c. lemon juice
- 8 oz. low-fat vanilla yogurt
- 4 drops (approximately) yellow food coloring (optional)
- 1 (9-inch) baked pastry shell
- 1/2 c. strawberry preserves
- 3 Tbsp. chopped pecans
- 8 oz. whipped topping
Method
- Combine first 3 ingredients in saucepan.
- Put next 3 ingredients in a bowl. Stir. Blend into saucepan.
- Let stand 1 minute.
- Stir constantly over medium heat until thick. Boil 1 minute. Remove from heat. Stir in butter and lemon juice. Blend. Refrigerate approximately 45 minutes.
- Fold in yogurt.
- Add coloring.
