Ingredients

  • 1/4 c. sugar
  • 1/4 c. cornstarch
  • 1 pkg. unflavored gelatin
  • 3/4 c. light cream or half and half
  • 2/3 c. white corn syrup
  • 3 beaten egg yolks
  • 2 Tbsp. butter or margarine
  • jelly beans (green and yellow)
  • 1/3 c. lemon juice
  • 8 oz. low-fat vanilla yogurt
  • 4 drops (approximately) yellow food coloring (optional)
  • 1 (9-inch) baked pastry shell
  • 1/2 c. strawberry preserves
  • 3 Tbsp. chopped pecans
  • 8 oz. whipped topping

Method

  • Combine first 3 ingredients in saucepan.
  • Put next 3 ingredients in a bowl. Stir. Blend into saucepan.
  • Let stand 1 minute.
  • Stir constantly over medium heat until thick. Boil 1 minute. Remove from heat. Stir in butter and lemon juice. Blend. Refrigerate approximately 45 minutes.
  • Fold in yogurt.
  • Add coloring.
