- 8 to 10 green peppers
- 1 large onion, diced
- several stalks of celery, diced
- 2 lb. good ground beef
- 1/2 lb. sage sausage
- 1/2 tsp. rubbed sage
- 1 1/2 to 2 c. crushed saltines
- 3 medium eggs
- pinch of chili pepper
- pinch of black pepper
- heavy pinch of salt
- hot pepper and other spices (optional)
- canned tomatoes
- spaghetti sauce
Method
- Clean peppers and cut off tops.
- (Save tops, minus stems, for filling.)
- Combine celery, onion, and diced pepper top pieces and saute in a skillet.
