- 2 lbs. ground beef
- 1 lbs. ground pork
- 4 cloves garlic, chopped
- 1 cup onion, chopped
- 1 cup tomato sauce
- 1 cup water
- 1 1/2 cups beer
- 3 tbsp. chili powder
- 2 tbsp. chicken or beef bouillon
- 2 tbsp. cumin
- 2 tsp. sugar
- 1 tsp. cocoa
- 2 tsp. paprika
- 2 tsp. oregano
- 1/2 tsp. ground coriander
- 1 tbsp. Louisiana hot sauce
- 1 tbsp. cornmeal
- 1 tsp. flour
Method
- In a large pot brown meat in 2 batches, set aside.
- Saute garlic and onion til tender.
- Add meat, tomato sauce, water, beer, chili powder, bouillon, cumin, paprika, oregano, sugar, cocoa, coriander and hot sauce.
- Bring to boil and simmer 2 hours
- Mix cornmeal and flour with 1 tsp. warm water
- Add to chili, simmer for 20 mins.
