Ingredients

  • 2 lbs. ground beef
  • 1 lbs. ground pork
  • 4 cloves garlic, chopped
  • 1 cup onion, chopped
  • 1 cup tomato sauce
  • 1 cup water
  • 1 1/2 cups beer
  • 3 tbsp. chili powder
  • 2 tbsp. chicken or beef bouillon
  • 2 tbsp. cumin
  • 2 tsp. sugar
  • 1 tsp. cocoa
  • 2 tsp. paprika
  • 2 tsp. oregano
  • 1/2 tsp. ground coriander
  • 1 tbsp. Louisiana hot sauce
  • 1 tbsp. cornmeal
  • 1 tsp. flour

Method

  • In a large pot brown meat in 2 batches, set aside.
  • Saute garlic and onion til tender.
  • Add meat, tomato sauce, water, beer, chili powder, bouillon, cumin, paprika, oregano, sugar, cocoa, coriander and hot sauce.
  • Bring to boil and simmer 2 hours
  • Mix cornmeal and flour with 1 tsp. warm water
  • Add to chili, simmer for 20 mins.
