- 1 tablespoon butter
- 1 onion, chopped fine
- 1 clove garlic, chopped fine
- 1 tablespoon fresh ginger, chopped fine
- 1 tablespoon curry powder
- 2 tablespoons sugar
- 2 teaspoons salt
- 4 cups water
- 15 oz. can pure pumpkin
- 1 can black beans, drained and rinsed
- 1 cup corn
- Optional:
- salsa
- cheddar cheese
- cilantro
- sour cream
Method
- Melt butter in a pot at medium heat. Add onion, cook for 3-5 minutes until softened. Add garlic and ginger and cook for 1 minute. Add curry powder, stir and cook for 1 minute. Add water and bring to a simmer. Add pumpkin, salt and sugar and mix well. Add the remaining ingredients and bring soup to a boil. Reduce heat and simmer for 10 minutes.
- Serve soup with optional ingredients for more flavor.
