Ingredients

  • 1 tablespoon butter
  • 1 onion, chopped fine
  • 1 clove garlic, chopped fine
  • 1 tablespoon fresh ginger, chopped fine
  • 1 tablespoon curry powder
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 4 cups water
  • 15 oz. can pure pumpkin
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • Optional:
  • salsa
  • cheddar cheese
  • cilantro
  • sour cream

Method

  • Melt butter in a pot at medium heat. Add onion, cook for 3-5 minutes until softened. Add garlic and ginger and cook for 1 minute. Add curry powder, stir and cook for 1 minute. Add water and bring to a simmer. Add pumpkin, salt and sugar and mix well. Add the remaining ingredients and bring soup to a boil. Reduce heat and simmer for 10 minutes.
  • Serve soup with optional ingredients for more flavor.
