Ingredients
- 1 cup finely ground cornmeal, plus extra for dusting
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1 tsp sugar
- 1/2 tsp chili powder
- 2 tbsp curry powder, plus extra for sprinkling
- 1/2 cup milk
- 1 1/2 tbsp butter
- None None parchment paper
Method
- Preheat the oven to 400°F. Place the cornmeal and flour in a bowl with the salt, sugar, chili powder and curry powder. Mix well.
- Heat the milk. Just before it begins to boil, remove from the heat and stir in the butter. Once melted add the flour mixture. Mix to make a dough using an electric mixer fitted with a dough hook.
- Dust a work surface with cornmeal. Roll out the dough, in portions, to 1/8 inch thickness. Cut into pieces using a jigsaw puzzle cookie cutter. Place on 4-5 baking sheets lined with parchment paper. Bake for 8 mins. Allow to cool. Sprinkle with curry powder just before serving.
