Ingredients

  • 2 lb. boneless chicken breast, cut into 1-inch pieces
  • 1 clove garlic, diced
  • 1 medium onion, diced
  • 1 small can tomato paste
  • 1 1/2 c. water
  • 2 Tbsp. margarine
  • 2 Tbsp. curry powder

Method

  • Saute chicken in
  • tablespoon
  • margarine until brown. Remove chicken
  • to
  • bowl.
  • To
  • drippings,
  • add
  • tablespoon margarine, onions and garlic; saute until brown.
  • Add 1/4 cup water. Add curry powder and cook
  • for 2 minutes.
  • Add rest of water and tomato paste.
  • Cook for 3 to 4 minutes.
  • Add chicken and simmer until chicken is
  • tender,
  • 30 to 40 minutes.
  • Serve over rice.
