Ingredients
- 2 lb. boneless chicken breast, cut into 1-inch pieces
- 1 clove garlic, diced
- 1 medium onion, diced
- 1 small can tomato paste
- 1 1/2 c. water
- 2 Tbsp. margarine
- 2 Tbsp. curry powder
Method
- Saute chicken in
- tablespoon
- margarine until brown. Remove chicken
- to
- bowl.
- To
- drippings,
- add
- tablespoon margarine, onions and garlic; saute until brown.
- Add 1/4 cup water. Add curry powder and cook
- for 2 minutes.
- Add rest of water and tomato paste.
- Cook for 3 to 4 minutes.
- Add chicken and simmer until chicken is
- tender,
- 30 to 40 minutes.
- Serve over rice.
