- 2 qt. water
- 3 c. white beans, cooked
- 2 stalks celery, cut up
- 2 large carrots, grated
- 2 potatoes, diced
- 1/4 c. parsley
- 1/4 c. butter
- 1 onion, diced
- 1 tsp. garlic
- 1/4 c. Parmesan cheese
- 1 qt. Italian tomatoes
- salt and pepper
- 1 tsp. oregano
- 2 cubes chicken bouillon
Method
- Cook, stirring occasionally.
- After it boils, reduce heat to low.
- Top with cheese when served.
- Add chicken or beef if desired.
