Ingredients

  • 12 cup all-purpose flour
  • 12 cup barley flour (or another whole grain flour, such as wheat or oat)
  • 23 cup white sugar or 23 cup brown sugar
  • 2 cups cranberries or 1 (12 ounce) package cranberries
  • 34 cup walnuts, chopped
  • 14 cup margarine, softened
  • 12 banana, mashed
  • 2 eggs, beaten

Method

  • Preheat oven to 350 degrees.
  • Butter a 9-inch round or 8x8 square pan.
  • Cream margarine and banana.
  • Stir in eggs and sugars.
  • Gently stir in the flour.
  • Add the cranberries and walnuts, stirring only as much as needed to combine.
  • Spread the batter in the pan.
  • Bake for 40 minutes or until a knife inserted near the center comes out clean.
