Ingredients
- 1 T coriander seeds
- 1 1/2 lb. new potatoes
- Salt
- 1/2 c. creme fraiche
- 2 T unsalted butter
- Black pepper to taste
- 2 T fresh chives (optional)
Method
- 1) Toast coriander seeds over low heat 3-4 min.
- 2)Crush seeds using the side of a chef's knife or in a mortar and pestle. Set aside.
- 3) Boil potatoes until tender, about 20 min. Drain and return to pot until ready to serve
- 4) Peel if desired; lightly crush with masher or fork. Sprinkle with sea salt.
- 5) Stir creme fraiche and spoon over potatoes.
- 6) Cut up butter and sprinkle on top, adding more salt and pepper to taste.
- 7) Top with chives.
