Ingredients

  • 1 T coriander seeds
  • 1 1/2 lb. new potatoes
  • Salt
  • 1/2 c. creme fraiche
  • 2 T unsalted butter
  • Black pepper to taste
  • 2 T fresh chives (optional)

Method

  • 1) Toast coriander seeds over low heat 3-4 min.
  • 2)Crush seeds using the side of a chef's knife or in a mortar and pestle. Set aside.
  • 3) Boil potatoes until tender, about 20 min. Drain and return to pot until ready to serve
  • 4) Peel if desired; lightly crush with masher or fork. Sprinkle with sea salt.
  • 5) Stir creme fraiche and spoon over potatoes.
  • 6) Cut up butter and sprinkle on top, adding more salt and pepper to taste.
  • 7) Top with chives.
