Ingredients

  • 1/2 head red cabbage finely shredded
  • 1/4 head chinese cabbage finely shredded
  • 1 small carrot cut into matchsticks
  • 1 red pepper finely sliced
  • 4 scallions thinly sliced
  • 1/2 cup mint leaves
  • 3 1/2 ounces ramen noodles
  • dressing
  • 1/3 cup malt vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons peanut oil
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil

Method

  • In a large serving bowl, combine all vegetables, mint, and noodles, tossing well. Chill, covered, until required.
  • To make dressing, whisk together all ingredients until sugar dissolves.
  • Just before serving, drizzle dressing over salad and toss well.
