Ingredients

  • 2 c. flour, sifted
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. butter, softened
  • 1 c. light brown sugar, firmly packed
  • 1 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2 c. raw quick oats
  • 1 (3 1/2 oz.) can flaked coconut

Method

  • Preheat oven to 375°.
  • Lightly grease cookie sheets.
  • Sift flour, baking powder and salt; set aside.
  • In large mixing bowl, at medium speed, mix butter, sugars, egg and vanilla until light and fluffy.
  • At low speed, beat in flour mixture until well combined. Stir in oats and coconut until well blended to make a stiff dough. Drop by slightly rounded teaspoonfuls, 2 inches apart.
  • Bake for 12 to 15 minutes.
  • Remove to wire rack to cool.
  • Makes 5 dozen.
