Ingredients
- 2 c. flour, sifted
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 c. butter, softened
- 1 c. light brown sugar, firmly packed
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
- 2 c. raw quick oats
- 1 (3 1/2 oz.) can flaked coconut
Method
- Preheat oven to 375°.
- Lightly grease cookie sheets.
- Sift flour, baking powder and salt; set aside.
- In large mixing bowl, at medium speed, mix butter, sugars, egg and vanilla until light and fluffy.
- At low speed, beat in flour mixture until well combined. Stir in oats and coconut until well blended to make a stiff dough. Drop by slightly rounded teaspoonfuls, 2 inches apart.
- Bake for 12 to 15 minutes.
- Remove to wire rack to cool.
- Makes 5 dozen.
