Ingredients

  • 2 tomatoes
  • 2 croissants
  • 25 g butter
  • 3 eggs
  • 1 -2 slice ham
  • parsley
  • salt
  • pepper

Method

  • Place the tomatoes, cut side up, under a medium-high grill for 5 minutes.
  • Remove from heat and keep warm.
  • Put the croissants, cut side up, under the grill for 2 minutes.
  • Remove from heat and keep warm.
  • Now melt the butter in a small frying pan over a gentle heat.
  • Season the beaten eggs with salt and pepper, and add to the pan.
  • Cook until the eggs are just set (making sure you're stirring all the time), then remove the pan from the heat.
  • Chop up the cooked ham and fold into the eggs.
  • Pile on to one croissant half each, top with the other halves and serve with the grilled tomatoes alongside.
  • Garnish with parsley sprigs.
