Ingredients
- rabbit tenderloin
- fennel
- garlic
- egg white
- cream
- salt and pepper
- crepinette
- silverbeet
Method
Blend farce of leg meat, confit fennel, garlic, egg white, cream, salt and pepper.
Pipe farce on to square of crepinette. Place braised silverbeet and rabbit tenderloin on top.
Drizzle with a little jus and roll up.
Pan-fry and bake at 180 degrees for five minutes.
