Ingredients

  • 6 large white onions
  • 1/2 c. water
  • 6 tsp. chicken bouillon, dissolved
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 6 slices French bread or toast
  • seasoned croutons
  • sliced Swiss or Mozzarella cheese
  • 1/4 c. Parmesan cheese

Method

  • Simmer thinly sliced onions in water until tender.
  • Dissolve bouillon.
  • Add to onions.
  • Simmer a few minutes.
  • Place a few croutons and a slice of toast in each bowl.
  • Add a slice of cheese.
  • Pour soup over cheese.
  • Sprinkle with Parmesan cheese. Let stand for a minute or two to melt cheese.
