- 1 lb. black-eyed peas
- 1/4 lb. salt pork
- 1 whole onion, chopped
- 1 c. bell pepper, chopped
- 2 cloves garlic, chopped
- 1 tsp. salt
- 1 tsp. red pepper
- 1 tsp. black pepper
- 3 dashes hot sauce
- 1 (8 oz.) can tomato sauce
- 1/4 tsp. oregano
- 1/4 tsp. thyme
- 2 lb. smoked sausage, chopped
Method
- Cook peas and salt pork about 20 minutes or until tender.
- Add other ingredients and simmer for 1 hour.
