Ingredients
- 1 sweet potato large, 1 3/4 c. after mashed
- 1 cup almond milk plain, room temp.
- 1/2 cup vegetable broth more or less, for desired thickness
- orange zest optional:
- 1 tablespoon extra-virgin olive oil adds richness
Method
- Bake sweet potato at 400F for about 40 min
- Remove skin from potato (careful, extremely hot!)
- Place potato in blender with almond milk, broth, salt, zest, and olive oil.
- Blend until silky smooth, pour into serving bowls.
- Add pepper or other garnishes to taste.
