Ingredients

  • 1 sweet potato large, 1 3/4 c. after mashed
  • 1 cup almond milk plain, room temp.
  • 1/2 cup vegetable broth more or less, for desired thickness
  • orange zest optional:
  • 1 tablespoon extra-virgin olive oil adds richness

Method

  • Bake sweet potato at 400F for about 40 min
  • Remove skin from potato (careful, extremely hot!)
  • Place potato in blender with almond milk, broth, salt, zest, and olive oil.
  • Blend until silky smooth, pour into serving bowls.
  • Add pepper or other garnishes to taste.
