- 2 lb. unpeeled red potatoes (about 6 medium)
- 1/4 c. chopped green onions
- 1 (2 oz.) jar drained pimiento
- 1/3 c. mayonnaise
- 1/4 c. low-fat yogurt
- 1 1/2 tsp. prepared mustard
- 1 tsp. sugar
- 1 tsp. white vinegar
- 1/2 tsp. salt
- 1/2 tsp. celery
- 1/4 tsp. pepper
- 1/8 tsp. garlic powder
Method
- Boil potatoes
- until tender.
- Peel, cool and cube half. Combine potatoes,
- green onions and pimiento in bowl.
- Combine mayonnaise and
- all other ingredients.
- Stir into potatoes and toss gently.
- Cover and chill.
- Yield:
- 10 servings.
