Ingredients

  • 2 lb. unpeeled red potatoes (about 6 medium)
  • 1/4 c. chopped green onions
  • 1 (2 oz.) jar drained pimiento
  • 1/3 c. mayonnaise
  • 1/4 c. low-fat yogurt
  • 1 1/2 tsp. prepared mustard
  • 1 tsp. sugar
  • 1 tsp. white vinegar
  • 1/2 tsp. salt
  • 1/2 tsp. celery
  • 1/4 tsp. pepper
  • 1/8 tsp. garlic powder

Method

  • Boil potatoes
  • until tender.
  • Peel, cool and cube half. Combine potatoes,
  • green onions and pimiento in bowl.
  • Combine mayonnaise and
  • all other ingredients.
  • Stir into potatoes and toss gently.
  • Cover and chill.
  • Yield:
  • 10 servings.
