Ingredients

  • 1 (No. 303) can Blue Lake green beans, liquid removed
  • 1 tbsp. pickle relish
  • 2 hard boiled Large eggs, minced
  • 1/8 teaspoon pepper
  • 1/4 c. diced celery, minced
  • 1 sm. onion, chopped
  • 1/2 teaspoon salt
  • 1/4 c. mayonnaise or possibly lowfat sour cream

Method

  • Mix vegetables, pickle relish, Large eggs, salt and pepper.
  • Add in mayonnaise or possibly lowfat sour cream and mix lightly.
  • Refrigeratethoroughly and serve on salad green.
  • Garnish with grated cheese, if you like.
  • Makes 4 generous servings as a salad course, 6 when served with entree.
