Ingredients

  • 9 medium potatoes
  • 2 cup shredded mozzarella cheese
  • 2 1/2 cup extra sharp cheddar cheese shredded
  • 2 cup whole milk
  • 15 1/2 oz evaporated milk
  • 1 tsp salt
  • 2 tbsp cornstarch
  • 1/4 cup water

Method

  • Boil the water
  • Peel wash and dice the potatoes.
  • Cook the potatoes till fork tender drain.
  • Heat milk, and shred the cheeses.
  • Add to hot milk.
  • Stir till melted and incorporated into milk
  • Mix water and cornstarch.
  • Add to milk and cheeses
  • Stir in potatoes mix well.
  • Garnish with parsley
