Ingredients
- 1 tablespoon olive oil
- 1 onion
- 5 pieces celery
- 3 potatoes
- 4 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon salt
- 12 teaspoon pepper
- 1 cup grated cheddar cheese
Method
- Heat oil in saucepan and add diced onions and cook for a few minutes.
- Add 5 ribs of sliced celery and cook 5 minutes.
- Add peeled and chopped potatoes, chicken broth, thyme, salt and pepper.
- Bring to a boil.
- Reduce heat and cover and cook for 30 minute Puree soup in blender.
- Taste and season with additional salt and pepper as required.
- Sprinke with grated cheddar cheese( we leave this part out and it's still very tasty soup!
