Ingredients

  • 1 tablespoon olive oil
  • 1 onion
  • 5 pieces celery
  • 3 potatoes
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 12 teaspoon pepper
  • 1 cup grated cheddar cheese

Method

  • Heat oil in saucepan and add diced onions and cook for a few minutes.
  • Add 5 ribs of sliced celery and cook 5 minutes.
  • Add peeled and chopped potatoes, chicken broth, thyme, salt and pepper.
  • Bring to a boil.
  • Reduce heat and cover and cook for 30 minute Puree soup in blender.
  • Taste and season with additional salt and pepper as required.
  • Sprinke with grated cheddar cheese( we leave this part out and it's still very tasty soup!
