Ingredients

  • 1 head cauliflower, cut into bite-sized pieces
  • 1/4 cup butter
  • 1 medium onion, chopped
  • 2 tablespoons flour
  • 2 cups chicken stock
  • 2 cups milk or 2 cups cream
  • 1/2 teaspoon Worcestershire sauce
  • 3/4 teaspoon salt
  • 1 cup cheddar cheese, grated

Method

  • Cook cauliflower in about 1 cup water. Drain and reserve liquid. Set cauliflower aside.
  • Melt butter, add onion, and cook until soft.
  • Blend in flour, add stock and bring to a boil, stirring well. Stir in 1 cup cauliflower liquid, milk, Worcestershire sauce and salt. Add cauliflower and cheese and heat through.
