Ingredients
- 4 c. sliced pears
- 1 c. water
- 1/2 c. sugar
- 2 Tbsp. cornstarch
- 1/8 tsp. salt
- 1 tsp. grated lemon rind
- 1 Tbsp. lemon juice
- 9 or 10-inch pie crust
Method
- Boil pears in 1 cup water for 10 minutes.
- Drain and save liquid for sauce.
- Mix sugar, cornstarch and salt.
- Add lemon rind, juice and 1 cup cooking liquid from pears.
- Cook until thick, stirring constantly.
- Put pears in uncooked pie crust; cover with sauce.
- Sprinkle with Streusel Topping and bake in a hot 425° oven for 15 minutes.
- Reduce heat to 350° and bake for 30 minutes longer.
- Serve warm with ice cream.
