Ingredients

  • 4 c. sliced pears
  • 1 c. water
  • 1/2 c. sugar
  • 2 Tbsp. cornstarch
  • 1/8 tsp. salt
  • 1 tsp. grated lemon rind
  • 1 Tbsp. lemon juice
  • 9 or 10-inch pie crust

Method

  • Boil pears in 1 cup water for 10 minutes.
  • Drain and save liquid for sauce.
  • Mix sugar, cornstarch and salt.
  • Add lemon rind, juice and 1 cup cooking liquid from pears.
  • Cook until thick, stirring constantly.
  • Put pears in uncooked pie crust; cover with sauce.
  • Sprinkle with Streusel Topping and bake in a hot 425° oven for 15 minutes.
  • Reduce heat to 350° and bake for 30 minutes longer.
  • Serve warm with ice cream.
