Ingredients

  • Irish potatoes
  • butter
  • 1 Tbsp. flour
  • milk
  • salt
  • pepper

Method

  • Cut into dice, cold, Irish potatoes; have them not too well done.
  • Put in a skillet a large lump of butter, a tablespoon of flour; let them cream together, not fry, then gently stir in milk; when it is hot, but in potatoes and season with salt and pepper. Shake the pan so they will not brown.
  • Keep covered.
  • When the potatoes are heated through, dish up.
