Ingredients
- 1 lb. ham, cut into 1/2-inch dice
- 1 (20 oz.) can hominy
- 3 c. light cream or half and half
- 3 Tbsp. flour
- salt and white pepper
Method
- Place hominy in strainer.
- Wash under cold water; drain.
- Pour cream into saucepan.
- Stir in flour until completely blended. Bring to a boil over moderate heat, stirring constantly.
- Reduce heat and simmer 3 minutes, stirring occasionally.
- Add ham and hominy.
- Simmer 5 minutes, stirring occasionally.
- Add salt and white pepper to taste.
- Serves 6.
