Ingredients

  • 1 lb. ham, cut into 1/2-inch dice
  • 1 (20 oz.) can hominy
  • 3 c. light cream or half and half
  • 3 Tbsp. flour
  • salt and white pepper

Method

  • Place hominy in strainer.
  • Wash under cold water; drain.
  • Pour cream into saucepan.
  • Stir in flour until completely blended. Bring to a boil over moderate heat, stirring constantly.
  • Reduce heat and simmer 3 minutes, stirring occasionally.
  • Add ham and hominy.
  • Simmer 5 minutes, stirring occasionally.
  • Add salt and white pepper to taste.
  • Serves 6.
