Ingredients
- 4 large potatoes, grated
- 1/8 c. grated onion
- 2 Tbsp. flour
- 1 egg, slightly beaten
Method
- Keep grated potatoes covered with cold water until ready to mix to prevent discoloration.
- Mix all ingredients in a large bowl.
- Spoon into nonstick or lightly oiled skillet and cook as you would regular pancakes.
- Turn cakes when edges become lightly browned.
- Serve warm with applesauce (optional).
