- 1/2 c. light margarine
- 3 Tbsp. canola oil
- 3/4 c. Sugar Twin
- 2 eggs, lightly beaten
- 2 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1/4 tsp. crushed cloves
- 1/4 tsp. cinnamon
- 1 1/2 c. unsweetened applesauce
- 1/2 tsp. vanilla
- 1 c. chopped dates
- 1 c. chopped pecans
Method
- Cream the margarine, oil and Sugar Twin.
- Add eggs and mix well.
- Sift together the flour, soda, salt, cloves and cinnamon; add to creamed mixture.
- Stir in applesauce and vanilla, mixing well.
- Add dates and nuts and mix well.
- Pour into greased and floured Bundt pan.
- Bake at 350° for 50 minutes; do not overbake. Serves 16.
