Ingredients

  • 1 large onion, chopped
  • 1 large carrot, shredded
  • 1 stalk celery, chopped
  • 2 Tbsp. butter
  • 1/4 tsp. pepper
  • 1/2 c. plain flour
  • 8 c. fat free chicken broth
  • 3 c. wild rice, cooked
  • 6 chicken breasts, cooked and shredded
  • 1 c. fat free evaporated milk
  • 1/4 c. chives

Method

  • In a large saucepan, saute onion, carrot, and celery in butter until tender.
  • Spoon in flour and stir.
  • Gradually add broth.
  • Stir in rice, chicken, salt and pepper.
  • Bring to a boil over medium heat.
  • Cook and stir for 2 to 3 minutes until thick. Stir in milk and cook another 3 to 5 minutes until thoroughly heated.
