Ingredients
- 1 large onion, chopped
- 1 large carrot, shredded
- 1 stalk celery, chopped
- 2 Tbsp. butter
- 1/4 tsp. pepper
- 1/2 c. plain flour
- 8 c. fat free chicken broth
- 3 c. wild rice, cooked
- 6 chicken breasts, cooked and shredded
- 1 c. fat free evaporated milk
- 1/4 c. chives
Method
- In a large saucepan, saute onion, carrot, and celery in butter until tender.
- Spoon in flour and stir.
- Gradually add broth.
- Stir in rice, chicken, salt and pepper.
- Bring to a boil over medium heat.
- Cook and stir for 2 to 3 minutes until thick. Stir in milk and cook another 3 to 5 minutes until thoroughly heated.
