Ingredients

  • 3 bananas ripe
  • 1 apple diced
  • 1/4 cup raisins
  • 1/2 cup oats
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 4 tablespoons canola oil
  • 1 1/2 cups self rising flour
  • 1/2 cup confectioner's sugar
  • 2 teaspoons whole milk
  • 1 dash cinnamon

Method

  • Preheat over to 350 degrees F.
  • Butter a loaf pan.
  • In a medium glass bowl, combine fruit and oats and toss. Set aside.
  • In the bowl of your stand mixer, beat sugars, egg, and oil until smooth.
  • Add the fruit and beat on low speed until everything is well incorporated. Add the flour a 1/4 cup at a time.
  • Pour batter into the loaf pan and bake for about 30-40 minutes or until golden brown and the cake tester comes clean.
  • Leave the loaf in the pan to cool on a wire rack.
  • In a small bowl, whisk ingredients for cinnamon icing. Drizzle over cooled loaf and let set for about 10 minutes.
  • Serve with a cup of coffee or tea.
