Ingredients
- 1 onion
- 1 clove garlic, chopped
- 60 g butter
- 1 kg pumpkin, diced (Peeled)
- 1 pinch sugar
- 1 pinch nutmeg
- 1 teaspoon curry powder
- 1 bay leaf
- 1 liter chicken stock
- 500 ml milk
- 100 ml cream
Method
- Saute onion and garlic in the butter until soft.
- Add pumpkin, sugar, nutmeg and curry.
- Add stock and bayleaf.
- simmer for 30 minutes.
- Remove bayleaf.
- Puree in blender (Hand held blender is fine) with milk.
- Season to taste and finish with cream and chives.
